My version is really yummy but I was informed that it is not tuna casserole and I was wondering what some really good recipes were so I can serve actual tuna casserole. Here's how I make mine- 1 box of Velveeta shells and cheese- cooked, throw in 1 can of tuna (sometimes 2) 1 cup of cooked peas, salt and pepper, mix it all together, place in a baking dish, cover with crushed whole wheat ritz crackers and bake on 350 for 20 minutes.

I made a stove top version last week.
Stove Top Tuna & Noodle Casserole

2 5 oz cans tuna, drained
2 small cans cream of mushroom or cream of chicken soup (I used 1)
1/2 soup can milk
1/2 soup can water
1 15 oz can peas and carrots (I used 1 can of each)
1 small onion, chopped
1 small can of mushrroms stem and pieces
2 Tbs. butter or margarine
1 small pkg egg noodles (I had 1/2 of a 1 lb. box of elbows and about a 1/4 of small shells on hand)
salt & pepper to taste
I also added about 1/4 cup of swiss cheese. I didn't have onion or mushrooms on hand, but I sprinkled Tastefully Simple's Onion Onion in to the soup mixture.
Directions:
In a colander drain tuna, peas and carrots, mushrooms, set aside. In a large pot melt butter or margarine and saute chopped onion until tender. Mix soup, milk and water together to make sauce. Add all ingredients except noodles and salt and pepper to the pot with the onion, heat to boiling and then turn down to simmer. Boil noodles in separate pot until just about done, and add to the other ingredients. Salt and pepper to taste. Simmer anywhere from 30 minutes to all day, still often make sure it doesn't stick to the bottom of the pot.
I cooked the macaroni in one (larger) pot and the sauce in another. I stirred the veggies in with the noodles and then poured the sauce over the mixture, stirring in the cheese. Dinner was ready in lless than an hour.
