Post New Years holiday activities

We’re heading back on Dec 28-Jan 6 doing both WDW and US. It’s our first time going during the peak holidays.

We will be on site at Disney the entire trip. Aside from the Epcot Festival of the Holidays which clearly ends Dec 30 and the Santa meet and greets ending after Christmas Eve, what other holiday activities stop after new years?

I’m not sure when Disney Springs takes down the Christmas Tree Stroll but usually in early January. Also Resort Gingerbread displays are down usually a few days after. We often travel this week and that has been our experience.
