Has anyone had luck subbing something else for dessert at TS meals? I have had gastric bypass and cannot really tolerate sweet stuff. I would be happy with a fruit cup or cheese plate, or subbing out for a salad. If I call Guest Services, can they help with all of my ressies? My diet is similar to a diabetic in terms of what I can personally tolerate....Sugar Free is not a great alternative option as the sugar alcohols cause GI issues.

You can usually get a fruit plate. That is typically what is offered to my friend who has an egg allergy so I know it is available as a dessert option.
 
Didn't they start to be able to substitute a salad/ soup for the dessert? I thought that happened last year?

Guest services will not be able to help you as it really is up to the discretion of every restaurant. That means you will have to ask EVERY time. I expect the majority will be accommodating, but there are no guarantees. If Via Napoli is on your list, don't expect them to allow anything. That one is a stickler to the DDP, so you may want to skip it altogether or pay OOP there.

I've seen this or similar comments made about Via Napoli. I've never been there but why are they such sticklers? Is it such a hugely popular restaurant that people will eat there despite?

They are a 3rd party and their margins are already so low on DDP that they don't want people to share or swap out anything. The big abuse would be people getting 1 pizza and splitting it between 4 people with 1 credit. For whatever reason they are cool with it if you pay for it yourself but I don't think Disney gives them the menu cost of the pizza for DDP so they don't make a lot on it when ordered that way. Same goes for sides etc.

"Despite" what?
As @wilkeliza stated, they are merely sticking closely to the rules of the DDP Program. Disney does not own them. The DDP does not reimburse them their costs. They truly can not afford to not stick by the rules they agreed to.

Via Napoli has some strict allergy protocols as well. For gluten basically everything in the restaurant is considered to have gluten because they throw their dough in the kitchen and well flour gets everywhere.

They may substitute but even the DDP literature says you can ask at each restaurant but substitutions are not guaranteed. If writing it as a special dietary need they may offer an off the menu dessert as a one for one but an appetizer for a dessert would be a different thing.
 
It's not a deal breaker in any case, I am used to not having anything, but I would like my DH to be able to enjoy that final course without feeling guilty. We sometimes (at home) get a single dessert to go so he can enjoy it at home and I have a bite. But sitting there in a restaurant while only one is eating sometimes feels awkward...

I would probably choose TS restaurants that have those options as desserts already, either on the kids' menu or adult menu. It is the likeliest way to get a yes, when they are subbing desserts for desserts.

Many kid meals have a fruit salad dessert at TS, so I'd look at menus and find those - since they are for small kids, they'd probably also be the perfect size...
