There's something else that wasn't mentioned in the discussion on why Disney might be adding the allergy info to the menus. As someone with a wife and daughter with food allergies, I'm well aware of the issue, and we've had our conversations with Disney chefs numerous times, so I can appreciate it from that angle and I agree that having the info on the menu will be very helpful.
On the other hand, Disney is probably getting overwhelmed with the huge number of people who are adopting certain diets as a lifestyle choice rather than out of medical need. Gluten-free is probably the best example of this. I know many people have gone gluten-free because it's the latest food craze, like low-carb was a few years ago. So if a lot of those folks are asking to speak with the chefs, I imagine that would be very time consuming for the chef staff.
Overall I think it's a great idea though.
