No, contrary to popular belief WDW does not have rooms set aside for Covid quarantine. They will work with guests who develop symptoms and/or test positive while staying there, but nothing specifically planned as quarantine rooms. Last I knew (and I haven't checked the wording lately), you do have to attest that you haven't tested positive or been a close contact in X days when you check-in. Now whether you could arrange something by phone and have another member of your party deal with in-person, they might allow it. But unless you are able to get a DVC villa or at least a family suite, you're basically in a small hotel room without ability to cook meals during your quarantine, unable to use the pool or resort amenities so paying high prices for a bed. Personally, I think there are better options than a WDW resort to hole-up at for quarantine. Some people have found vacation house rental with kitchen and pool, etc. sometimes beach access.
