I know the earliest check-in is 11, but is that actually the time they open the counter? We'll be checking in at the Miami port rather than in the Orlando airport as we usually do, so I'm wondering how early we should get there.

Well, at Port Canaveral the terminal opens at 10:30 for check in and that's when the counters are open, also I would think it's the same (but at 11:00) for Miami, if that's the time the first Port Arrival Time is.
BTW, you can't check in at MCO any longer (not for several years), only at the port.
I would definitely recommend arriving after 11. People line up outside earlier than that, and it's not really a comfortable outside waiting area because the port is such a high traffic area, and it's hot out!
