Port Excursions: Do you pay upon booking?

I intend on booking an excursion at Grand Cayman and a few things at Castaway. I will be booking 75 days prior to sail date due to this being my first cruise. I was just wondering if you pay on that day or do you have the option to pay at a later date (closer to embarkation)?

The excursions are added to your folio during the cruise. I forget how much your folio has to accrue before they hit the credit card on file, but I've racked up over $1000 in charges (tips, excursions, adult beverages), and they didn't charge me until disembarkation day.
