Port Excursion recommendations for Eastern Caribbean?

We are heading out on the Fantasy for a 7 day Eastern Caribbean route in October. I'm looking for recommendations for things to do on St Thomas/St John and St Martin. We have 3 kids - 14, 12 and 9. Our middle child is adventurous, but our other two are not scuba diving/parasailing types. We will spend the day on the beach at Castaway Cay, so we don't feel the need to sit on a beach all day at the other ports of call, unless there is something amazing to see.

I am really behind in planning this trip because we didn't even decide for sure that we were going until the PIF date because of a close relatives rapidly declining health...I feel like I'm scrambling now to catch up. We haven't sailed on in over two years and I know things have changed in that time! I also haven't had a lot of time to research and read the boards, so I apologize if I'm repeating a frequent question. Grateful for any suggestions!
