Hi y'all...
My friend (more an acquaintance) is due with baby #3 very soon. When I had #3 she was kind enough to drop off a meal for our family. Basically it was a homemade salad, chicken dish and ice cream cake. Now it's my turn and I don't know what to make. Any suggestions of healthy dishes with no tomato base that I can bake ahead so she can just warm up OR that I can prepare ahead for her to bake. She is an organic type mommy so anything promoting that would be helpful -- though I can always substitute veggies with organic and such.

Thanks for any help -- multiple recipes welcome as I have two other friends who are due around Christmas. Tis the season for babies around here!

What about a chicken casserole with brown rice, free-range chicken and organic vegetables? If they are not lactose intolerant add sour cream (or mayo), salt, pepper and cheddar cheese and it can be heated up later.

Just a thought. :)
