If you are really serious...leaving at 6:50am and all...then no, concierge will probably not be worth it for you. They generally don't start serving breakfast until 7:00am.
IMHO if you are touring "commando" style, then unless you need queen sized beds there's no reason to spend the money on any more than a moderate.
That said, there is bottled water and soda you can take with you, they ahve strollers available for free in a limited number, breakfast in teh am, light snacks during the day, wine and appetizers at dinner time, dessert around 7:00pm. But most of this is happening when you'd be gone, so you'd get no value out of it.
Otherwise you get robes in the room and a free minifridge.
BTW--Not sure if you realize it but in January there are very limited park hours--nothing generally opens before 8:00 or 9:00am, and other than Epcot everything closes between 5:00-7:00pm. Epcot is open until 9:00.
