Swirly SMS (If you have a sim that is SMS capable)
iFile (Great file browser with access to the whole file system)
 
QuickOffice - allows you to upload/view/edit office documents from PC (need a 'cloud' sytem for this - like MobileMe)

iTeleport - allows you to remotely access your desktop and control it (I have to admit this works great if you're at home and on the same network - I continue to have difficulty with it when on 3G or someone's else's network)

Realtor.com - one of my all time favorite apps - based on your current location it will give you a list of all houses that are for sale - usually has full descriptions, pictures as well as price

Scrabble - evil, evil, time-sucking game - but fun

Crosswords - fun crossword game - expandable at an additional cost

Bumping this up. I got an iPad for Christmas. I would love to see more recommendations.

A favorite of ours so far is
The Treasures of Montezuma (similar to Bejeweled)
 
The new Tron Legacy game is fun, as well as Toy Story 3 - I used that one in a reading class for my adopted 3rd grade classroom...... Also have used Epicurious a number of times. TheBigGuy is freekin addicted to Angry Birds - who thought that one up???:confused3
 
Todo – as it says in the name a to-do app. Sync with the computer and your other IOS devices.

Simplenote – free app. Allows you to sync notes online. I like to compose emails, articles in simplenote and can then finish on desktop if required.

Quickoffice - allows you to edit and open Microsoft files.

Dropbox – free cloud solution used with all of the above.

Evernote – another free app. You can see a pattern emerging here ;) I would be lost without this app. A great way to store all your notes, clip webpages for later comparison and reading. Most of my projects start life in evernote.
 
Doc to Go full version. for working with Word, Xcel, Power Point. cost 16 bucks but WELL worth it.

Planets- great for those that like the night sky and free.

Suduko- mental Kung Fu and free

Flight status- I travel a lot for work and this gives me on time ratings, gates, delays in minutes and lets you track a flight in the air by airport, airline or flight number. Free.

E reader- books to read before the door closes and above 10k feet when traveling. Free

Weather Channel- got to know the weather where i am going and what it is at home! Free
