Not a big loss not getting Le Cellier (JMO) and actually think you will enjoy a few other places better. If you are not on the DDP and paying OOP, I would recommend Shula's. IMHO this is the best steakhouse in WDW. If you are on the DDP and you don't mind using 2ts, Yachtsman, California Grill, and Narcoossee's all have very good steaks. If you only want to use 1TS, I would recommend Coral Reef, Captains Grill, and Grand Floridian Cafe; they all offer a very good steak.
If you're looking for steak then Le Cellier being booked is a good thing. Now you can try some of the better steak places at WDW. I've never done Shula's (which gets excellent reviews) but of the places I have tried I rank them in this order for steak:

I have also heard that the steak at Flying Fish is also very good (however, I haven't tried it since I am a big fish eater, so eating a steak at a seafood restaurant is a no-no).
Turf Club Grill at Saratoga Springs has one of the best Steaks I have eaten at WDW. No big loss not getting into LeCellier especially since they are now 2 TS meals if u r on the Dining Plan. If price doesn't matter then yes Shulas, Yachtsman Stk Hse is also very gd
