I’m hoping to get dining for the first night John stamos is there. Do I just go online and do it like I do when it’s my 60 day mark for regular dining reservations?

Assuming you're looking specifically for a Candlelight Processional package (dinner + reserved seating for the show), these go on sale October 17-- if your 60 day mark is after October 17, then yes, you'll just go online and look for Candlelight Processional dining packages like you would for any other dining reservation. If your 60 day is before Oct 17, you can book everything else and then come back 10/17 for the Candlelight Processional package!
