Please help me pick park days

I usually put hours into planning our Disney trips but with a busy schedule and all the changes to Disney, I didn’t plan out our trip yet and our dining window opens this week (is dining at 60 or 90 days out). I need to figure out which parks to visit based on crowd levels. We plan to visit all MK, Ak, Epcot, and Hollywood studios. We have a park hopper pass. We fly in 3/4 and leave leave 3/13. I don’t think we will be able to visit parks either travel day. We like to do MK our first day but if it’s super busy we can go somewhere else. Any advice on which parks to go to on which days? Also, if I get a park reservation for the morning, do I need a reservation for the afternoon if I want to park hop? Thanks for any advice!!!!
 
ADRs are 60 days.
How many park days are you planning? How many days in each park?
Are you staying onsite? Is so, deluxe or another with after hours privileges?
Only need reservation for first park of the day. No hopping until 2, but don't need to alert Disney where you're going.

My favorite days for parks are DHS on weekends, it's almost always same crowd level every day anyway, Animal Kingdom on Sunday/Monday and Epcot/MK Monday through Thursday.

But at the same time, if you're planning ADRs, can sometimes be best to get those reservations then fill in park reservations based off that.
 
We are staying at the Polynesian. How do I find out which days we get early entrance to a park? We will visit a park everyday except the two travel days, so Saturday 3/5- Saturday 3/12 will be full park days (taking breaks as wanted at the resort).

Every day, every park is open 30 minutes early for all resort guests, but there are also some days where the park is open late for deluxe resort guests. They only do it for Epcot and Magic Kingdom one day each per week.

It has been Mondays for Epcot and Wednesdays for Magic Kingdom, but starting in February for the 2 weeks they have listed, they've changed magic kingdom to Fridays
