Please HELP! Cream cheese sandwiches?

Hi all! I am planning to make little sandwiches (& other stuff!) for my dd's Tinkerbell party this weekend. I have planned on pb&j, and read somewhere about cream cheese sandwiches. If you have made these, please tell me how! I don't know what to use!! :rolleyes:

We used to eat cream cheese & jelly sandwiches when i was a kid.
We used grape or strawberry, but i guess any flavor would do.

Make sure the cream cheese is soft - it will definetly tear your bread if not!
Haven't made any since they came out w/ the whipped or "soft" ;) cream cheese varieties.
 
I make cream cheese and jelly sandwiches for my son, I alway used the whipped cre4am cheese that comes in a tub. It spreads easy. HIs favorite is with raspberry jellly.
 
Adults like green olive slices with the cream cheese, but I doubt too many kids would. However, chopped sweet pickle is pretty good.

If you're going to use the soft cream cheese in a tub, you can get quite a variety of flavors. We like strawberry - you can mix chopped strawberries (use frozen if you can't get fresh where you are - just drain them as they defrost) in with the flavored or plain.

Another one we like (but might not go over with kids) is seafood - fake crab, real crab, salad shrimp . . . .

I just use a thin layer of whatever cream cheese mix I want & use bread I've trimmed the crusts from. If I put lettuce or watercress in the sandwiches, I try to spread a thin layer of the cream cheese mix on both pieces of bread so the greens will stay IN the sandwich & it holds together.
 

I forgot about those, my mom always made me cream cheese and olive sandwiches when I was little, I loved the pimento stuffed olives and she sliced them on top of the cream cheese. I don't think my kids would eat them, but them they don't like olives.
 
Growning up at parties, showers etc we always had cream cheese and pineapple sandwiches on nut bread.
 
Oh Sha_lyn - I'd forgotten about those! My mother used to buy (for VERY special occasions) that canned date-nut bread, then slice it & spread plain cream cheese (there was no other kind!) on it to make little sandwiches. Oh yummy!! :teeth: We never put pineapple in/on them though.
 
I found the pineapple filling recipe

6 oz cream cheese

1/3 cup crushed pineapple

1/4 cupcoconut (did have this a kid, but it's in my Southern Living cookbook. It is actually pretty good)

2 TBS pineapple preserves


Combine well and chill.
 
i love cream cheese and cucumber sandwiches on pumpernickle. just cut the cuke's VERY thinly!
 
Kids love pinwheel sandwiches. Buy an unsliced sandwich loaf and then slice it lengthwise. Cut off the crusts, spread with filling of choice and then lay a special treat at one of the small ends and roll up starting at that end. We used to make peanut butter with banana or Cheese Whiz with either gherkins or marashino cherries (my favourite), but you could use cream cheese with olives, or strawberries or smoked salmon (not for kids probably). These would be very pretty made with strawberry or blueberry cream cheese and matching fruit.
 
Thanks for all of the great suggestions! I ended up making the cc/cuke sandwiches, and they turned out great! All of the other ideas sound so great, I'm going to save them for my next party! ;)
