We are going to WDW this year... (yay!!!)... but I digress... This is a two parter...
1. Right now we have our trip planned where we arrive the day after Thanksgiving (regular season) and leave on the 3rd... We are considering moving our trip where we arrive on the Sunday after Thanksgiving (value season) and leaving on the 5th... Which would you do? What would we miss by arriving 2 days later? It would save us $500+ to delay... Is the holiday activities on that Saturday worth it?
2. We have always stayed at WL... but we are planning on staying at Poly... will we be disappointed at Christmastime?

All you will miss is crowds!!! I would definitely move up the trip. It will save you money and be much less busy. I've heard the week after Thanksgiving is one of the best times to go. As for Poly vs. WL I think either one will be great. WL will probably feel more "christmasy" but it's always good to try new resorts.
 
The week after Thanksgiving is a great time to go. We arrived the day before Thanksgiving last year and the crowds were horrible until the Sunday after Thanksgiving. You can do MVMCP which is lots of fun. Most of the rides were a walk on the entire week. We rode Buzz Lightyear about 10 times in a row (I didn't want to stop until I beat my DH one time! :D ). The holiday decorations are all up. You will have a wonderful time. Save the money. It is not worth it to deal with the Thanksgiving crowd if you don't have to.
 
I would move. We went the same time you are mentioning just a few weeks ago. Monday was the worst day we had crowd wise but it was a great time.
 

You won't miss a thing. All of the holiday activities are just starting after thankgiving.

Best time of the year to go. Saving the $$$ gives you more to play with there.
 
I would move the trip as well. Less crowds is more than worth it and saving money on top of that!!!
 
Move the trip. When the kids where little we would go after Thanksgiving. It was like owning the parks. No crowds , easy to get on rides and no rush at dinner. Can't beat that!
