I would point out that during the time you are going, requesting a LV in non-concierge at Polynesian would cost you only $10 per night less than a GV concierge. A LV concierge would be around $50, maybe more, per night than a GV concierge. Whether or not the view is worth the additional $50+ p/night in concierge is up to you. We've done both on more than one occasion--at this point, it isn't that important to us.
As to not using the lounge for evening service, I say skip the "nice evening" meals and make your "nice" meal a large lunch. Exceptions being, of course, those meals that only serve at night--HDD, Luau, Cape May, etc. Lunches are less expensive and typically nearly the same menu as dinner--portions are also nearly identical. That frees you to return to the hotel in the late afternoon for your swim, dress for a park in the evening AND take advantage of evening service. The big debate is whether or not the appetizers are plentiful enough to "skip" the dinner meal. We have never had a problem there--we don't tend to eat that much in the evening after a day of park play, swimming, etc. Then there are always those desserts for the late evening munchies!
Just a thought to add to the rest. . .we all have our own preferences, that's for sure.
BTW, yes--to water bottles, coke, etc.--you are free to take what you wish from the lounge to your room, pools, parks, etc.
