Please Critique My Final (?) Itinerary

I'm taking my 73 y/o mom for her first ever trip to WDW. She is a brittle diabetic who must eat regularly and frequently so we planned almost all TS. We won't be doing many rides, as she wants to mainly see the Christmas stuff, visit the countries in Epcot, resorts, and restaraunts and get pictures with the characters. I would sort of like to add breakfast one day at 'Ohannas in order to see Stitch and Lilo), but can't decide where, since we are already doing 'Ohannas one night for dinner and are also going to the Polynesian for breakfast at Konas one morning. I have the DDE card, so should be able to save about $200.00 using it. We'll be doing a split stay at POFQ and CSR, by the way. How do the following look?

An area I notice you are missing is something in the Boardwalk area. If you wish to add a breakfast, what about Spoodles?

Your list sounds like some good food! You have some of my favorite places like Boma, Kona, LTT. 50's and Rose and Crown.

All I have to say is "can I come too?!" That is my type of vacation - eating my way through Disney! Looks awesome.

Well, so much for final itinerary. We just switched a 7:50am 'Ohannas character breakfast for the 8:00am Konas breakfast for our last day. Oh well hopefully this is the last ADR change. By the way I had my choice of times. The CM said very few people knew Lilo and Stitch had been added last week so they have all kinds of openings.
