Planning our Wishes Wedding! Looking for some peace of mind

Hey everyone! New to this forum but I figured that this would be the best place to come. My fiancé and I are planning out wishes wedding for September 2017, we are getting ready to hand over the deposit and sign that contract and my biggest anxiety is the food. We are planning our reception(brunch) at the grand Floridian and I'm trying to find out HOW customizable the menus are for the brunch buffet and cocktail hour? We are huge foodies and it has to be great. We plan on making a trip to Orlando from California for our food tasting but I've been reading a lot on how the wedding planners are quick to shoot down any thing that's not "standard" any insight would be amazing!!

Food is one of the areas where Disney loves to exceed expectations and one of the few where the sky really is the limit. Your planner isn't the one who dictates what you can and can't have, it's the chefs--and they like to impress! The only restrictions have to do with your venue and whether it is too far from a kitchen for certain things (like ice slippers). You can also pay to have a kitchen tent set up at some locations though.

The menus are completely customizable. At your menu tasting you will be able to interact with the chef and tell him/her what you like and dislike about the things you are trying.
