Planning our first full Disney Experience

Please bear with me. This is my first post.

I was trying to plan a "budget" family vacation for this February and saw the Buy4, get 3 deal and it was too good to pass up!

I am trying to plan our days and make dining reservations.

I have DD5 - who loves princesses and HM. DS - 1.5. DH and myself (both exhausted and work full time).

We are coming in late 2/11 and leave early 2/18. I have 7 days, no expire, w/o park hopper and DDP. Staying at POR

I would love a CRT breakfast or lunch reservation, but they are booked on the 12th and 15th (the EMH days)

So far I have this planned:

2/12 - Chef Mickey's 9:50 am
2/13 - EPCOT DAY - 11:20 AM - Storybook Princess Lunch and
6:40 PM Rose and Brown

2/14 Boatwright's - 7pm - (It's Valentine's day - i thought it would good to reserve something)
2/16 - AK Day - 1:30 Tusker Buffet Lunch (This comes w/ tickets to the show afterwards)

So - I need to add an MK day and I would LIKE a HS day. But I'm not sure what to do. Any and all advice is welcome. (Do you think we need a car?)
