Planning a bucket list trip for Epcot 35!

We are doing something I never thought I would be able to do, but has been on my bucket list for a long time: back to back coast to coast trip! We will have breakfast in World and dinner in Land! Has anyone else ever done this? Tips to share? We already had a trip planned for Epcot's 35th anniversary and DH surprised me by adding this on!

We are also staying at Contemporary (something else I never thought would happen and I am just over the moon excited!) for either 5 or 7 days, haven't committed yet. The hitch is we have to find a flight that's late enough for us to have time for breakfast, since DME leaves 3 hours before the flight, and still get there early enough for a late dinner in Land. For some reason Thursday and Saturday have good flight times that would work, but not Friday. We are planning 2 days in Epcot, 1 days at MK, 1 day at SeaWorld, and then a day or 2 left open. Then 4 days at Land. I'm thinking it might be easiest to have breakfast at CM instead of in MK, that way we don't have to factor in transpo time, although being at Contemporary, that may not have as big of an impact as we are used to (we are typically in the Value Resorts camp.)

I'm hoping Epcot 35 will have some fun stuff and cool merch like Epcot's 30th did - so sad we weren't able to go for that. We are also going to try and swing MNSSHP at both World and Land! For those of you who have done both, which do you like better? We have only attended parties at World.
