We are going May 14-18... Arrive at MCO at 12:30AM (Sunday night) - staying at Hyatt and catching ME in the morning around 9:30, unless we can get up earlier. Checking into ASMo before heading to the parks.
Monday - half day at HS.
Tuesday - MK
Wednesday - Epcot
Thursday - AK
Friday — MK
Trying to avoid EMH. Except for Friday, MK has morning EMH.

Trying to go with all the strategies, skip MK on Monday and avoid EMH. Unless those rules don’t apply anymore. Help!
 
This is great! I would just make sure to try to be up most days for Rope Drop and stay as late as possible. Take naps if necessary (I say most days because you might really need some sleep that first night! RD really does help with rides, but with as little sleep as you would get that night...)

You’re staying on site right? That EMH day should be just fine.

Try to get your FP+ early in the day so you can get as many later FP+ as possible.

What time should we schedule our last of the 3 FP+?
 

If you can get there for EMH you’ll get a lot done. On an EMH day I’d schedule FP for 9:00,10:00 and 11:00. That way you can begin getting additional FP as soon as you’ve tapped into your 11:00 ride.

We were totally the opposite from OP and loved EMH! It was less crowded, not hot, and we got a lot done!

Yes I think if you can get your group moving it's definitely an advantage to go for morning EMH. I planned our FP as early as possible on the EMH mornings. That way, if we are there from 8-9 - great! If not and we arrive at 9:00 once the park is already crowded, at least we can go straight to our FP rides. We have 4 kids under the age of 6 in our group so it may work to do EMH and it may not.
 
if you have park hoppers I would do what every park had EMH in the morning ( use this park to RD) and then stay there for a while and then head to another park after lunch or right before lunch and have your FP for this park. if a park has evening EMH then go there after you visit another park. I find if you can park hope EMH are great as you can get a lot done. now I would not stay at the park all day with EMH.

I like to do my first FP for about an hour after the park opens this way you can RD a few rides
 
Something to consider is Disney is offering Early Morning Magic on the Tuesday you are going to Magic Kingdom. Its a ticketed event (besides your theme park admission) but has in the park when it is practically empty at 7:45am to ride Peter pan, 7DMT, and Winnie the pooh as many times as you would like along with a breakfast buffett..... just something to consider

I was totally thinking about adding that, we would spend $120+Tip to eat a character breakfast. It's only $100 more for the 4 of us to enjoy the extra 1.25 hours.
