Plan B/ Recovery mode strategy?

Refurbishments are well known beforehand. How do we come up with a Plan B strategy if some attractions are not reopened/in recovery mode during trip? What are some extracurricular activities or activities onsite that's outside of the norm besides rides that can be done? Also are there any volunteer opportunities for the whole family to do close by?
 
We usually go in the winter, so rides/attractions usually will be down. We just skip them if they are down and not worry about it.
 
There's so many attractions at Disney that if a few are not working, there's generally plenty to do. I've been on 10 day trips and still not been able to experience everything I wanted.
