There is some cool Miniature Golf Courses at Disney, Winter Summerland at BB and Fantasia Gardens in front of Boardwalk. The mouse boats are always fun on the lake. Cirque de Soleil, though expensive, is another wonderful experience. Planet Hollywood at DTD is great to have dinner at. There is a fully equipped movie 24 theatre AMC there as well..
Some non Disney things in Orlando are Ripley's Believe it or Not, Guinness World Book of Records, Porte Orlando (with an IMAX movie theatre), Amazing Animals, Belz Factory Outlets (where they have a cool Disney merchandising outlet that sells Disney stuff cheap that they are trying to get rid of).. For the brave of heart, there is the SkyCoaster on US-192 in Kissimmee, Old Town, Medieval Times (and various other dinner shows). There is also the famous Peabody Hotel Duck Parade (where ducks are treated to a daily red carpet walk from elevator to their pond). And of course, Universal Orlando, Universal Citywalk as well.
Places to Avoid: The Amazing Place ($5 for a maze) on US-192, and WonderWorks at Pointe Orlando (though the upside down building is definitely worth seeing). It's a cheap science museum that isn't worth the price. If you like science, the Orlando Science Center is also very cool...
