Here's why the chase scene was considered un-pc. The original scene had a punch line. The first chases featured lecherous pirates chasing after fleeing ladies. The final chase featured a rotund woman, giggling and chasing after a pirate who had the same look of fright on his face as the first ladies did. This reversal was the comedic punchline to the joke. Something that offensive (roll eyes here) couldn't possibly perservere.
Also, in the middle of that scene, the barrell now occupied by Jack Sparrow held a very young lady until the most recent change. However, up until about 1997, the pirate sitting in front of the barrell was not holding the treasure map, rather the lady's petticoat. And, his script was pretty spicy for a Disney attraction. He suggested that he was looking for a bewitched maiden he once knew that he'd like to "hoist his colors" upon, and that if anyone might help him find the "shy little wench", he might be "willing to share".
