It really depends on when you arrive but I would arrive a minimum of 30 mins before dinner for the more popular backdrops and probably more. It also depends if you have early or late dining.

We had late dining on the Dream a couple weeks ago with a full ship. I think we got in line for the white backdrop on "optional dress-up" night at around 7:45. It was our turn by about 8:05.
That said, there were a lot of first-timers on board, and not a lot of folks were actually dressed up. So for a longer cruise with an actual formal night and more Castaway Club members, I would expect the wait to be longer.
