Tell me about Peter Pan Flight? I've heard it is dark, but I assume it is still good for a 5 year old? At the moment, it is in my list for both DS9 and DD5.
Peter Pan is one of DD's favorite rides. She will be 5 next month, and while she was fearful of it about a year ago (due to the darkness) now she loves it. My 2yo loves it too. It's a very tame ride. I would definitely recommend it for your kids.
We always go several times in a row. There is a peter pan app that has the story to help familiarize your child with the characters. Dark but black light effect that is very cool. The first time my child rode it he was 9 months old and he has ridden it every year since. (I also put glow bracelets on my child in the am because so many rides are "dark.")

It's very tame, but is dark. If your child is afraid of the dark, they might not like it. My kids personally love it, but they also love all things Peter Pan. My youngest first rode it before he turned 2.
We also use glow bracelets on some of the dark rides that are more scary (like HM).
I'm not sure of your experience with Disney and these boards, but you should also be aware of the term "dark ride." Basically, it just means it's an indoor ride. Most, especially in Fantasyland, use black lights and fluorescent paint to create very bright colors on the animatronics.
