Pepperjack cheese

I need to use up alot of pepperjack cheese before it goes bad. Anyone have any good recipes that use it?
 
How about making quesadillas?
 
Just a note that you can freeze cheese.

I often use pepperjack in grilled cheese, quesadillas, or just plain sandwiches. Melts well and you can use for a spicy difference in any recipe in place of cheddar cheese.
 

We use it over tortilla chips as nachos, in scrambled eggs, and love it in quesadillas!!!
 
I used 2 lb of it recently making a chicken and cheese chili in my crock pot. Won 2nd place (out of 16) at the chili cook-off at our church.
Didn't have a recipe, just used great northern beans and some other light/white beans along with a can of black eyed peas, shredded chicken, a packet of chili seasonings and a bit more chili powder for heat.
Doing it again, I'd wait until it was almost done to add the cheese. At the end I added more shredded sharp cheddar.
Ground turkey works well too.
 
I did not know that it was possible to freeze cheese. That is good to know. Thanks for the ideas guys!!
 
It is wonderful just melted over any vegtable to add a spicy edge. Easy and fast.
 
I grill chicken breasts and grate pepper jack on top of them while they are still warm. Then, I top that with bacon and tomatoes. Yummmmmy.
 
I had a pepperjack grilled cheese sandwhich for lunch today and it was YUMMY :). Have no idea what possessed me to fix myself that for lunch, but it hit the spot!
 
you can mix the pepperjack with grits and make spicy cheese grits. it makes an awesome side dish !! ( my DH and DD4 love this !) I usually do this with pepperjack, colby or chedder and mozzarella. You just cook the grits ( I get Quaker quick grits) and add in the cheese, an egg and stir it up, put it in a baking dish and bake in the oven for like 25 minutes. it's all gooey and yummy!!! it's excellent w/ BBQ shrimp or chicken. :love:
 
To repeat PPs (kind of), it makes an AWESOME panini. I used some oven roasted chicken breast sandwich meat with the pepper jack, didn't even need any condiments (though I bet a tomato would have made it even better!). If you don't have a panini press, just grill it. Mmmmmm...hungry for one now :thumbsup2
 
I pound out chicken breasts then place pepper jack and pepperoni on top and roll (or just fold in half). Dip in Italian dressing then coat with mixture of bread crumbs and parmesan cheese. Bake at 350 until chicken is cooked through. This is a huge hit in our house. I leave off the pepperoni for kids who don't like it. This works well with cheese sticks also.
 
Easiest recipe ever from Taste of Home cookbook -

Make a pocket in boneless chicken breasts and fill with the cheese then put BBQ sauce on top.
Grill, broil or I just baked mine for 45 minutes at 375 degrees. Baste with more BBQ sauce a couple extra times. Turned out moist and juicy and very good - especially for almost no work.
