This is the only QS place we eat at in MK, so I'm curious as to how they are handling the toppings bar. I could be wrong, but I assume it isn't just open like normal?
Correct. They give you toppings on the tray with your food, if anything is missing or you need more just ask. They forgot to give me shredded cheese, but did provide it when I asked.
I really don't have a problem with individual pre-packaged toppings instead of a toppings bar. If they choose to go this way permanently they'll have room to add more seating.

I’ve had PB three times since reopening and shredded cheese isn’t standard anymore. Only lettuce, sliced tomatoes, and sour cream. Good to know you can ask but considering that place is a zoo it’s not easy to just head on up to the counter.

Hmm, it may not have been standard then, either. I noticed before I walked away from the counter, so I'd recommend checking things over before you walk away. Good practice anyway, since I've had them forget things I'd ordered before, too.
So glad to hear. LOVE Pecos Bills. Had never eaten here and took the Keys to the Kingdom tour and stopped here for lunch as a part of the tour. Have eaten here every trip since. Sounds like like things are getting better each passing day. Soon we will be back to normal. Yeah!
Kind of a side note but.... Had to make a bathroom stop and PB was closest, the smell in the restaurant was putrid. Not sure what was going on, but I would not have wanted to eat my meal and smell that

We ate there in January and tried Pork Carnitas Rice Bowl - Yellow Rice topped with Seasoned Pork, Grilled Peppers and Onions, Black Beans, Lettuce, Tomato, Sour Cream, and Salsa
Everything was ok and fresh except we had to eat around the pork. It really was inedible, it tasted like someone had marinated it in melted plastic. We were starving and still couldn't eat that meat. Maybe that's what you smelled lol.
