Pecos Bill Tall Inn Cafe Veggie Options

I just discovered that Disney brought back some vegetarian options similar to the ones that Tortuga Tavern used to have. So my mom likes vegetarian options, but she is very allergic to zucchini and squash, which is what their "roasted vegetables" are. If we were to order the burrito or salad without the roasted vegetables I was wondering if the "fixin's bar" has enough extras to add onto the salad to make it a filling enough meal.

There is plenty of stuff on the toppings bar, and they serve black beans with the burritos. I am not a big fan of black beans normally, but I liked them at Pecos Bill's. They are not mushy or saucy and have a nice flavor.

The toppings bar includes guacamole (that I liked a lot), shredded cheeses (jack and cheddar), pico de gallo, salsas, chopped tomatoes, onions, and shredded lettuce. There may have been other stuff--this is only what I remember.

We enjoyed the food here last year, and I am psyched to eat at Pecos again next month. The fajita platter is a great buy, especially with the 20% AP discount. The food is fresh and well-prepared. Dining is indoors and air-conditioned.

They'll also sub the black beans on nachos in lieu of beef/chicken.
