I know there are threads on the disability board and I have emailed Disney regarding our son's allergy. But some of the most detailed advice comes from the actual people going to the parks and their experiences. The last thread I could find on this topic was from summer. I thought if anyone had recently been to Disney who has an allergy or a family member with an allergy could give their experiences.
My son is 7 and we had a safe trip 2 years ago. He was so happy to be able to have some treats. Some of the things he had that were safe were:
Dole whip
Mickey coconut patties
Mickey-head lollipops
Mickey ice cream bar

1) I have no food allergies, at least that I have encountered.
2) I also had fun with the same foods as your son.
3) Talk about serendipity!

My DH has a severe tree nut allergy and in all the times we have been to disney it has never been an issue. The basics apply. Stay away from the breads and chocolate. Other then that I usually note it on the ADR and the chef will almost always come out and talk to him. Even at the buffets the chefs have come out and spoke with him about what to avoid. I would guess Disney is very used to this sort of thing. Can't help you with snacks he tends to like salty over sweet. Good luck and have a great trip.

I have a tree nut allergy and the Chefs are great as the previous poster said! They will come out and tell you what is ok and not ok to have, for example at Ohanas, I was not able to have the bread pudding so they made me my own special dessert:) At Chef Mickey's the Chef walks the buffet with you to tell you what is ok and what isn't. Disney is great for people with food allergies!

DS9 is allergic to peanuts and tree nuts also, and up until recently, he was allergic to fish (thank goodness that one seems to have disappeared). Disney is by far the best place for vacations when it comes to allergy accommodations, and we have taken him there 3 times, the most recent being this past March over Spring Break. We email Brenda ahead of time and she takes care of alerting all the chefs, who then call us personally to go over his allergies. He has enjoyed just about every character meal, and has also dined at nice restaurants like CG and Artist Point.

During the few times at the buffets when the chefs have been the slightest concerned about cross contamination, they have made DS his own plate of whatever it is he wanted (pasta, etc). He was given a special menu for Simba's Cubhouse, too. Desserts are limited mostly to soft serve ice cream, but he has been able to enjoy a specially made anniversary cake at CG, as well as the divvies brand of brownies at Chef Mickey's.
