Hope maybe I can help with a few of your concerns.
In AK the info I was given was that the birds and bird handlers do eat nuts and the handlers do have nut oil residues on them.
i have asked this question a number of times and have always been assured it's safe, just do not touch/shake hands w/the handlers

We also discovered by asking that some of the snimals at Rafakis Planet Watch ( place you take the train to) does feed some of the animals peanut butter. ( The pigs for one. )
But other than avoiding certain places like Yak and Yeti ( uses peanut oils) you should have no issues. You can contact them for a list of resturants in the parks and resorts that have allergy friendly foods available.
we have eaten dinner at Y&Y and have had no problem... never told of peanut oil being used, however it is present in certain dishes (lettuce wraps for one) but they have an "allergy kitchen" where they prepared ds' ribs/etc...
Its all a matter of ones own comfort zone. Its just outside mine to eat anywhere they use nut oils. But there are those that do and are fine.
One really big thing to know is that while Itsakadoozies, frozen fruit bars , and Mickey bars are considered safe ( peanut / tree nut free - does use processed coconut oil ) they are often sold in cart right next to peanut covered bannannas. Those peanuts do get loose in those carts and if you have a touch allergic child you will want to be careful from which cart you get your frozen snacks.
MK- you can find many safe frozen bannanna nut free carts. In other parks not so much. I know of only one safe one at HS/MGM and thats over by Toy Story Mania . Woodys snack cart. Ice Cream from Dinosaur Gerties ( giant dino by water) is a safe soft serve also. In Epcot I havent had much luck. AK- We found only one cart and it was at the time over in Dinoland.
i have been to wdw more than 3 dozen times, at least a dozen of those w/ds who is peanut/tree nut allergic and do not recall ever seeing frozen bananas w/nuts anywhere other than DTD... they are in all the parks???
I grew up a hour from the parks and while I visit there more times than I can count I can only state the way it was asof our last trip. Its not so hard to find carts without the frozen bannannas in Mk but difficult in the other parks to find many that dont have them. In the confusion and craziness of being in a theme park its easy to miss so I thought pointing it out might help someone .
Also each park and resort has a head chef. They are really great to deal with and always go above and beyond . Plus you know that they know their stuff.
I know that Chef Tj is now stationed at the Grand Floridian and is famous for being great with allergies. In the Mk the head chef works out of The Plaza and was great at making anything my child wanted.
Chef TJ is the BESTTTT!!!!! He made my son feel like royalty! And the chef at the plaza (i have pics of him and our family, along w/jeanette our fave server, but do not recall his name is also awesome and amazing... for what we thought would be a simiple meal was probably the highlight of our trip! Also, Gigi at the Wishes Dessert Party is OUTSTANDING and made it possible for us to attend w/no problems (despite all the dessert buffet being off-limits to ds)!!!! [/COLOR] I am really glad to hear that. I havent tried Chef Tk yet but plan on doing so this trip. Glad you had a great experience with him.[/COLOR]
To avoid disapointment know also that some places can do safe Mickey shaped waffles and others cant. Its because of how certain places recieve the mix. I bought a really cute Mickey waffle maker off Target for 35.00 ( Disney store had it for 60.00) and plan on using that to compensate since it was such a big deal to my kid.
we have never been warned off mickey waffles...Just depends on your location and the severity of the allergy. I was told at Wilderness Lodges Whispering Canyon by the chef that they do not have the ability to make the safe Mickey waffles there as do some certain other locations due to the fact they recieve their batter premixed . But he did make some none Mickey shaped ones that were yummy and was very nice.
If you have a severly touch allergic child consider bringing a few pairs of gloves with. We have a dog thats trained to sniff out allergens and boy did he alert at Disney. The gloves come in handy for the games at Epcot , arcades , Indy Raceway cars , etc . .
Pretzels , churros , and popcorn ( made on shared equipment) were off limits for us but they have tons of safe options.
according to my research and our having eaten probably a million pretzels/churros/popcorns, these are all safe, and not made on shared equipment... to the OP: i would double check this info (esp the popcorn which is popped in the cart it is being sold from...If you see the list I attached or email special diets you will find it lists those items as made on shared equipment.
One last thing . When you first enter the Mk on Main St in the bakery they do have some allergy safe snacks. They used to be sold in a basket by the sodas. Most resorts and parks will have something safe also.
Many of the resort gift shops have the allergy free snacks (caramel corn = yummy!) and the table service restaurants and a few CS places also offer them... we always asked for an extra to-go brownie or cookie (individually wrapped) for future snacking/dessert when safe was not available and were never denied and always offered more! Another thing that the amazing chefs can/will do w/the allergy-safe brownies is make a brownie ice cream sundae/banana split... this was *always* a huge hit w/ds as he was able to enjoy a top of the line dessert with us!!! we have also had a server run out of his restaurant, purchase itzakadoozies for the whole family and present them to us on a royal platter for dessert! it was awesome and magical!
If no one posts it I will hunt down the email for you for special diets. They will send you a form you fill out ahead of time and a list of safe and not safe foods.
