I've had a couple of requests for this recipe, so here it is.
It really is one of the easiest of pies to make, just be sure to make it in the morning, or let it cool overnight, so it has a chance to set completely.
Peach Custard Pie
1 unbaked 9-inch pie shell
6 to 8 large peaches
3 eggs
1 cup sugar
pinch salt
Peel peaches and cut into large slices. Arrange in pie shell. Beat eggs, sugar and salt together and pour over peaches. Bake at 400F for 15 minutes. Reduce heat to 325F and bake 45 minutes more. Cool.
