Yes. The dining plan can be added on-line, but not with Disney Gift Cards, so you have to call MS. You can use as many Disney Gift Cards as necessary (no restriction).

I purchase gift cards $25 every week so when I go on the ship or the the world I am ready and don't spend much out of pocket. I generally only add the plan about a week out too.
