Does anyone have a quick, easy and cheap recipe for pasta salad that is NOT mayo based. I am thinking along the lines of pasta, cucumber, tomato, other veggies and Italian dressing. Can anyone help me?

I don't really have a "recipe"
I just do whatever veggies I want - usually cucumber, broccoli, onions or green onions, cherry tomatoes halved, diced carrots. Whatever I feel like that day. Then I also add in some shredded cheese, maybe half a bag or so. I pour a 16 oz bottle of italian in w/ cooked to al dente and cooled w/ cold water box of rotini (regular or tricolor) and my veggies (usually like, 1/2 - 3/4 of a cucumber, chopped small, a small broccoli head chopped small, 1 bunch green onions sliced up, 1 container cherry tomatoes) and mix well. You can eat this right away but it is best if gets to marinate for a few hours or overnight - if marinating overnight you should wait to put the tomatoes in until the next day so they don't get mushy. It is best with the full fat italian, but I use the light sometimes (not the fat free, doesn't work right). Also sometimes it needs a bit more dressing later. I just go by taste.

This is a recipe that I make that is usually requested by friends.

Pasta (I use shells)
Cucumber
Green Pepper
Onion

Dressing:
1 can tomato soup
3/4c apple cider vinegar
3/4 c sugar

Its different but very good.

I just use whatever veggies I have or am in the mood for along with bowties, rotini or elbow and either poppyseed dressing or light ranch. Somtimes I add pepperoni or ham and sometimes shredded cheese.

Kraft foods has some good recipes- of course they call for kraft brand foods but you can use the recipe with your favorite brands.

I love the strawberry orange pasta salad from the kraft website:

I just made some.....This is easy and delicious!!!

1 box tri color rotini pasta
1 large bottle Wishbone Robusto Italian Dressing
1 Can kidney beans
broccoli
cheddar cheese diced into small chunks

Enjoy!!!!

I use rotini noodles (whole wheat
Cucumber
Tomato
Green bell pepper
White cheddar cut in blocks
Orange cheddar cut in blocks
And 3/4 bottle Italian dressing

You can also add pepperoni and/or ham.

I make a greek pasta salad that everyone loves. I cook a bag of spiral pasta but any kind will work. I dice tomatoes, cucumbers, green peppers and red onion. I add it to the pasta plus black or kalamata olives and feta cheese. I add Kraft Greek dressing with feta but you can also use Italian. Let it all chill. It tastes better after a few hours.

Just made some tonight! I used tri-color pasta, grape tomatoes, broccoli, diced mozzarella cheese and fat-free Italian dressing.

I live in Canada, so don't know if they sell the Club House envelope seasoning packets in the US, but Club House makes a seasoning mix called "pasta salad" in a purple envelope... You add your own veggies ( I like cucumber, broccoli, blanched frozen corn, blanched frozenpeas, diced red pepper) add whatever veggies you like, then you boil a pot of bow tie pasta, or similar pasta noodle, mix the seasoning packet with vinegar and olive oil, mix all together and chill.....it is DELICIOUS! :goodvibes

Try this one if you like things sweet....but not to sweet.

1 box 16oz Rotini, Penne, shells or macaroni cooked and cooled
1 cucumber
1-2 bunches chopped green onions
a few tomatoes

Mix 3/4c Italian dressing (I use Wishbone) and 1/4c honey. Mix with pasta and veggies and let sit overnight. Stir a few times and again before serving. This is so easy and really good. I like lots of veggies so I usually double the dressing.

Pasta
tomatoes
cumbers
Italian dressing

I make the Salad Supreme recipe too, its always a favorite.

I use either rotini or Wacky Mac and add cucumbers, pepperoni slices, French Dressing, and grape tomatoes halved. It's yummy!

Rotini, cubed provolone, dry Italian salami, zucchini, red bell, black olives and Italian dressing. Red onion optional.

Here's one I make that is yummy:

1 package rotini
1 can petite diced tomatos (your choice of flavor type)
diced cucumbers
diced pepper
diced onion
olives
quartered artichoke hearts
salt & pepper to taste (optional)

I make it the morning off and the extra liquid from the diced tomato will mostly absorb into the pasta giving it a little extra flavor.

My BIL (he's a chef) does the following:

1 package rotini
Diced:
tomatos
peppers
onion
olives
1 small bottle of ranch dressing

He chops the veggies up the night before and lets them sit in the dressing overnight so that the flavors all blend and enhance each other. In the morning he makes the pasta and mixes it all together. This is really good and he usually gets elected to bring the pasta salad. :)

This is one I make that everyone seems to love.

  • 1 box bowtie noodles
  • 1/2lb crumbled bacon, could probably substitute those real bacon pieces in the salad dressing aisle
  • cherry tomatoes cut in half
  • feta cheese
  • chopped spinach, fresh works better then frozen
  • and a bottle of greek salad dressing, i've also used creay ceaser.
