Party of 1

Hello my mom is taking a solo trip in May and I'm helping her book ADR's.
She really wants to eat at Ohana for dinner and I've been checking everyday for a table for 1. No tables available. I looked for a table for 2 (just to see) and there's times available every night of her stay. What happens when She shows up solo? Will they seat her even tho the ADR is for a party of 2?

They will seat her if she shows up with just one. The same sized table will be used for either 1 or 2 people.

Just book it for two and let them know when she checks in that it will be just one. No problem. I've done it before. I was nervous to do Ohana solo but it turned out to be one of my better solo dining experiences at Disney.

Yep. 'Ohana's system is set up to discriminate against solo diners (I've heard of other odd-numbered parties (such as 3 or 5) having issues before also) in that it won't accept "1" in the party field. I have been assured by multiple cast members that there is no problem in making the reservation for 2 and only 1 showing up. So far I've resisted booking it in protest of the system though - especially when the other AYCE meals don't have the number restriction on their system. Plenty of other good places to eat - even for character dining. I love Stitch, but I can live without encountering him.

As others have mentioned, your mother will be fine if she shows up for a reservation for two with one person. They won't charge for her the extra person.

The Disney Dining Reservation system does have issues with odd-numbered parties, primarily (I think) at places that have tables for odd-numbered parties (I know 'Ohana has tables for 3). So the general advice is to usually look for reservations for the next even sized party and make a reservation for that size if you find a table.
