7-Layer Tex-Mex Dip

1 (16 ounce) can refried beans
1 cup guacamole
1/4 cup mayonnaise
1 (8 ounce) container sour cream
1 (1 ounce) package taco seasoning mix
2 cups shredded Cheddar cheese
1 tomato, chopped
1/4 cup chopped green onions
1/4 cup black olives, drained

In a large serving dish or platter, spread the refried beans.
Layer the guacamole on top of the beans.
In a medium bowl, mix the mayonnaise, sour cream and taco seasoning mix. Spread over the layer of guacamole.
Sprinkle a layer of Cheddar cheese over the mayonnaise mixture layer. Sprinkle tomato, green onions and black olives over the cheese.

(For potlucks, I've used disposable pizza pans - no dish to take home).
 
Clam dip

Saute onion in butter until soft.
1 stick butter (or margarine)
2 cans drained minced clams (reserve juice)
1 cup minced onions
2 cloves minced garlic

Add spices while occasionally stirring above.
2 Tbl parsely flakes
1 Tbl oregano
4 drops tobasco (or more)

When about done add:
2 tsp lemon juice
3/4 cup bread crumbs

Add drained clam juice and mix through

Fill pie plate and bake at 350 for 1/2/ hour
Top should be brown

Funny - a friend went to a party over this past weekend and the lady was serving bacon wrapped cocktail weenies - DH said they should be called cholesterol bombs! Still, I think they might be tasty!!
 
Here's another one my kids really love

Pizza Corn Dog Snacks

1 pkg. frozen corn dogs, thawed
1/2 C. pizza sauce
3 Tbs. chopped ripe olives
1 jar sliced mushrooms, drained
1/4 C. shredded Mozzarella cheese

Remove stick from each corndog; cut into 1 inch slices. Place on an ungreased baking sheet. Spread with pizza sauce. Top with olives, mushrooms and cheese. Bake at 350 for 15-20 minutes or until the cheese is melted and the corn dogs are heated through.


Here's a recipe from my great-aunt that is kind of like 7 layer dip.

Goldwater Dip

2 lbs. ground beef
2 onions, chopped
1 1/2 lbs. grated cheddar cheese
1 pint salsa
2 C. refried beans, warmed and mixed with salsa
mashed avacados
salsa
sour cream
tortilla chips

Brown ground beef. Remove to bowl, saving 2 Tbs. fat. Brown onions in beef fat. In a 9X13 baking dish layer 1/2 meat, 1/2 bean mixture, 1/2 onions, 1/2 cheese. Repeat layers. Bake at 350 degrees for 20-30 minutes. Serve with suggested toppings and dippers.

This is also really good by itself if you are avoiding chips.

Rachael Ray's Swiss and Bacon Dip Recipe #91306

I got this off of 30 Minutes Meals, luckily for me I had everything I needed to make it and was I happy! Try this, you won't be disapointed.
8 slices bacon, chopped
8 ounces soft cream cheese
1/2 cup mayonnaise
1 tablespoon prepared Dijon mustard
1 1/2 cups shredded swiss cheese
3 scallions, coarsley chopped (green onions)
1/2 cup smoked almonds, coarsly chopped
vegetables or bread, whatever you like for dipping

1 Preheat oven to 400 degrees F.
Brown bacon over medium high heat till crisp, then drain. In a mixing bowl combine cream cheese, mayo, Dijon till creamy. Add cheese and bacon to the mixture and blend. Transfer to a shallow casserole or baking dish. Bake untill golden and bubbly, approx.
15-18 minutes. Top with chopped smoked almonds. You may add 2 rounded teaspoons prepared horseradish when combining the cheese and bacon if you like.

You can find chili sauce where you find your ketchup and mustard. Heinz makes a really good variety. I make this every year for our Christmas tree decorating party, and even my picky eater kids love it!

Mexican Fudge

1 package of shredded cheddar cheese
1 package of shredded monterey jack cheese
(or two packages of the mexican blend shredded cheeses)
3 eggs
1 cup of green taco sauce. (the one in the bottle!)

mix the cheese together in one bowl. In a separate bowl, beat the three eggs and mix with green taco sauce. Pour half of cheese mixture into 8x8 pan (or 9x9), flattening and spreading to the edge. (should be thick) Pour egg/taco sauce mixture over cheese, up to edges of pan. Pour rest of cheese mixture over the top, spreading to edge of pan.

Cook in a preheated oven at 350 degrees for about 30 minutes, or until browning on top. If you stick a fork in center, it should come out clear. Let set for about 30 minutes when cooked.

Cut into fudge size squares and serve on tortilla chips. Great cold too!!

Everybody loves it. If you use the mexican cheese blend, it's a little spicier. I like it spicy.
 
My friend and I just threw a baby shower 2 weeks ago and the apps we had went over really well. I'll list a couple.

Hot Pizza Dip

1 pkg (8 oz) creamm cheese, softened
1 tsp Italian Seasoning (I used Good Seasons)
1 cup (4 oz) shredded mozzarella cheese
3/4 cup (3 oz) grated fresh Parmesan cheese
1 can/jar pizza sauce (8 oz)


1) Preheat oven to 350 * F. In small bowl combine cream cheese and seasoning mix, spread into bottom of "Mini baker". (Pampered Chef...I just used a smaller Corningware.)

2) In small bowl, combine mozzarella cheese and Parmesan. Sprinkle half of the cheese mixture over the cream chees emixture. Top with the pizza sauce, spreading evenly. Sprinkle with remaining cheese mixture. Bake 15-20 minutes or until bubbly.

You can top with diced bell pepper or chopped black olives.

Serve with toasted baguette slices. We didn't toast them and they were fine.

Yields 2 1/2 cups (20 servings)
 
Just remembered another one - the kids scorfed this up and they loved the name:

Dog Food Dip (or Cheesy Beefy Taco Dip, if you prefer) ;)

1 (2 pound) loaf processed cheese (Velveeta), cubed
1 1/2 pounds ground beef
2/3 cup water
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) jar salsa or picante sauce

Brown ground beef in a large skillet and drain. Mix in water and taco seasoning mix, cook and stir 2 to 4 minutes. (This can be done ahead & refrigerated).

Melt processed cheese in a slow cooker set for high heat, stirring occasionally to avoid burning. Mix in seasoned beef & salsa. Serve warm with tortilla chips.

***ETA: I'm another that thought the meatball/grape jelly/chili sauce thing sounded yuck, but it IS really good!
 
My DH just loves these.
You take pited dates and put a small piece of parmesan cheese in the center. wrap with half a slice of bacon and secure with a tooth pick. Broil for about 15 min or until bacon is done. quick easy and tastes great reheated.
 
Here's another:

Ham roll-ups

Boiled ham, sliced sandwich thickness or thin
1 container softened, whipped cream cheese with chives
walnuts, finely chopped


Take softened cream cheese and spread onto the slices of ham. Then take the walnuts and spread a thin layer over the cream cheese. Roll up tightly into a cigar shape. When finished place the "cigar"rolls in the fridge to chill. Once chilled, cut into 1/8ths, or 1/10ths and place on a serving tray.

We also did the Pampered Chef Taco Ring which went over very well.

slice a baguette into small round slices. brush slices with olive oil and garlic and toast in the oven until browned. (both sides)

You can top with fresh mozarella and roasted red peppers, or fresh mozarella and a pesto spread, or all three!! Drizzle a little more olive oil over the top with a bit of black pepper.

Delicious! :)

Would this work with just the meatballs or do you have to add the hot dogs? Just curious.

It is AWESOME! Sure it sounds a little wierd, but it is SO GOOD!

I think you can get chili sauce by the ketchup.
 
I will also vouch for the chili sauce/grape jelly meatballs....they are great!!!! And the hot pepper jelly over cream cheese is easy and very good!

I am always asked to make my Buffalo Chicken dip...especially during football season and holiday parties. It is so good!

buffalo Chicken Dip

4 boneless chicken breast halves (boiled, drained, and shredded with two forks)
1 12 ounce bottle of Frank's Louisiana Hot Sauce
1 16 ounce bottle of ranch dressing
2 8 ounce packages of cream cheese
1/2 cup celery chopped
8 ounces shredded Monterey jack cheese

Pre-heat oven to 350 degrees. In a 13x9x2 inch baking pan, mix together the shredded cooked chicken meat and the entire bottle of Frank's hot sauce, spreading to form an even layer.

In a saucepan over medium heat, combine the packages of cream cheese and entire bottle of Ranch dressing, stirring until hot and smooth. Pour this mixture over the chicken mixture to form a 2nd layer.

Sprinkle with chopped celery and bake uncovered for 20 minutes. Sprinkle on the cheese and bake for another 15 to 20 minutes until bubbly. Serve hot or at room temperature with celery sticks or crackers.
 
OK... I'll throw out one that is super easy, but looks fancy.

Baked Brie with Honey and Almonds

Drizzle one large wedge or wheel of Brie cheese with honey. Microwave at 50% power for a minute or two, until soft and bubbly. Top with slivers of almonds and serve with Carr water crackers or a sliced baguette of bread. Delicious!
 
For app's I go to BJ's or Costco's and get toasted ravioli's, cocktail franks, bruscetta, shrimp cocktail, pot stickers, individual spinach pies, chicken wings, swedish meatballs, scallops wrapped in bacon.

Everyone's dips sound good but we went to one party this season that was similar where everyone took a few apps and there were 5 different types of mexican 7 layer dip. I just think everyone takes dips, I prefer some more substantial food especially if I will be having a few cocktails...:drinking1
 
I made a baked Brie for Christmas eve last year, that really went over big.

1 can of Pillsbury crescent rolls
1 round of Brie

Open the crescent rolls, and squish them together to make a solid sheet, big enough for the brie to fit into.

Fold up the dough around the brie, twisting it on top, kinda like a package. Egg wash, and bake until browned. Serve alongside veggies, crackers, or whatever. Looks very impressive......I also had a little dough left over and cut out holly leaves and berries, and attached to top with egg wash.

I also saw a recipe that you can add nuts, or raspberry jam before 'tying' it up.
