Haha - I make fettucine alfredo with homemade sauce - and an absolutely essential ingredient is good fresh parmigiano-reggiano cheese. My sister made it once and was too cheap to buy the real cheese - so she used grated parmigiana. Yuck - she regretted serving it and the rest of us didn't enjoy eating it! I don't know where "Freedonia" is, but if it's in North Jersey or New York City, you'll want to go to Fairway Market to buy your Regg. Fairway sells it for as little as $8.99 a pound (on sale) and unlike Costco, you won't have to buy a huge chunk.
But it's so worth it. I like it sprinkled onto a plate w/extra virgin olive oil, freshly ground pepper, sea salt, and balsamic vinegar. Crusty bread to dip and I am in 7th heaven. I could eat that alone for dinner and be very happy.
