Parking questions

So...I understand that if you are staying on site (we'll be at the CR) you get free parking at the parks, but does this include the day you check out?

Like if we wanted to go to the AK Rainforest Cafe to eat AFTER we check out, would our parking still be free?

yes. your parking pass entitles you to park at the theme parks for free until MIDNIGHT of your check-out date.

Yes - it has your checkout date on your parking permit. It's good up till midnight of the day you check out.

As already noted, you are considered a guest of WDW until midnight of your last day. You can do everything and anything you want to do. We always hit a park for a few hours on our last day. It makes leaving a little less sad...........but not much.
