I know many of you stay on-site, but we'll be staying off-site and I was wondering about the parking fee? Can I leave the parks and return the same day without having to pay the parking fee again? And if so, when I return, can I park in another park's parking lot without paying the fee again?

Thanks!

Yes and yes. One parking fee covers you to park at any of the parks for the rest of the day. From the allearsnet.com site....

WHICH GUESTS MUST PAY TO PARK?

Non-Disney resort guests, or those staying off Disney property (with the exception of the above-mentioned passholders and program members) will be charged to park a vehicle at the four major theme parks. Guests need only pay for parking once per day and can move from park to park that day without paying again. Show the parking receipt received at the first park to the Cast Member at the next park's tollbooths to enter the parking lot without paying an additional charge.

Yes, you pay once and you can leave and return to the parks all day. And you can switch parks throughout the day also.

There is no fee for Downtown Disney parking, or the water parks.
