We have resv. at 3 different resort restaurants, my question is, if we drive over, will it be okay to leave our car at that resort to go to the parks?

If you are not a guest at the WDW resort, you have a 3-hour limit on parking. After that Disney may have your car towed. (I've never seen this happen, but others have reported observing this occur.)

You can valet park ($7/day) and possibly avoid this problem (being towed).

My advice: park at TTC or the parks, pay the $7 parking and take Disney transportation to your meal at the resorts.

They are very serious about the three hour time limit these days...there are people patrolling the resort parking lots to make sure you belong there.

Thanks for the advice, we have Aps so we will just park at the parks instead.
