Park Selection Help!

My girlfriend and I are visiting WDW in November and I am struggling with deciding on what parks to visit to start each day. We will be staying at Old Key West from 11/4-11/10.
We arrive at MCO around 11AM and will most likely take the ME to OKW at that time.

We have park hopper tickets and we are scheduled for the Christmas party on 11/9.
Our current Park Selections are as follows:
Nov. 4thNov. 5thNov. 6thNov. 7thNov. 8thNov. 9thNov. 10th
EpcotAnimal KingdomMagic KingdomHollywood StudiosMagic KingdomHollywood StudiosDisney Springs

We will utilize Genie+ and some IAS attractions. Want to get on RoTR and Remys for sure.
Should I change up our park selections for any reason due to crowds?

I know we are still a ways out, and so much can change with Genie+, but I am just looking for some suggestions. Thanks!
 
I think that Saturdays and Mondays are traditionally very busy days for Magic Kingdom.
 
Have you searched the internet for a crowd calendar? While they aren’t perfect, they try to predict the best park for a particular day. Just search 2021 Disney crowd calendar. Many options come up. Search a few options for November and your dates. It’s fairly quick and you should have a better idea of which park to choose each day!

Yes I have looked at TouringPlans. I am curious if I should change the days because of trying to get boarding groups as well. OR i may just end up paying for Remy and RoTR.
 
You may not be able to get Remy if you don't have a park reservation for EPCOT. With the hopper not allowing entrance to your second park until 2pm you will be unable to score a boarding pass for that ride.
