Park schedules/Dining reservations/Fantasmic

I hope this makes sense. It's kind of an all over the place question. We will be heading back to Disney September 27th- October 7th. My 180 day is March 31st. Am I correct that the park schedule for September will be posted on March 1st and the October schedule on April 1st? So will I need to be guessing and hoping when I make reservations for my October days on March 31st? I prefer to book all online but if calling will let me know the hours and such, I will do that. Will it? We prefer to be in the parks that are not on extra hours. (Anything to lessen the crowds- even in slow times.) While most of my tentative day/meal choices shouldn't be a problem to switch around if needed, I am planning on booking the Fantasmic package at the Brown Derby for 10/2. Well, that is if they will be having the show that night and it's not an extra hours day. We only do one full day at HS so the planning is sort of strict on that day. Haha. Are the Fantasmic packages opened at the 180+10 mark too or will that be a seperate thing that I will need to book 180 days exactly from the date we will be at that park? I've not ever done that meal package so I don't know much about how to get in on it. Any help would be appreciated! :) If it makes any difference we will be paying for that one OOP while all the others are with the dining plan. Thanks in advance for any advice.
 
You will not be guessing by the time you need to make your ADRs. Last year our trip started on Sept 14th and we were able to make our ADRs sometime mid-March. Yes, the park schedule will definately be in place by then!

However, having said that - Disney can and has changed some park schedules in the past after posting them.

September 2011 calendar out on link below. Again, may change closer to trip date but it's a great starting place! I revised my calendar plans last night based on this.
