so I have a 5 day park hopper, I have made all my park reservations, my question is can I leave a park and return later in the day? is that still possible with the reservation/capacity limits?

Yes, you will always be granted access to the park you have a reservation for.

You will always be granted access to the park where you PP reservation was made since you are already included in those attendance numbers.
