I have always been a hopper - but alwasy going as an adult it was easier to hop. Plus the more times I went to Dsieny the more flexible I was so we hopped if a park seemd to crowded or for whatever...
Last year I went for the first time with my son who was almost 2. I got hopper tickets and we really didn't use the hopper option. The only reason we used it was to have a couple of dinners in EPCOT. We stayed a BW and it made it easier to plan dinners in EPCOT and then going back to the resort afterwards.
This year we are taking DS again and I am NOT getting the hopper option. I figured out a good itinerary that doesn't need hopper and we get to go and see what we want to. If I were you I would figure out a rough itinerary for your trip and see how it flows. If you can see the attractions and shows and ADRS you want without hopping - then do it. With toddlers it is best to keep them close to their eating, napping and sleeping schedules - everyone will be happier. So hopping may not fit in to your planning at this age.
The biggest reason I can see getting hopper is to see certain parades and shows. Spectromagic may not run every night and without a hopper you are forced to go to MK on a day they show Spectromagic if you want to see it. The same for Fantasmic at DHS. But if that is not a priority or you can work it in then go without the hopper. If hopper was a few $ more per ticket then you would say "why not" but for our 6-day ticket there's close to a $50 difference a piece for park hopper - so it gets you thinking...
