Park Hopper vs. One Day Pass

Hi everyone! My family is going to Disney for four days. I was going to get the four day park hopper option but after looking at the pricing I can do a seven day no park hopper and then have the flexibility of using two days on the same day. Is that correct? It is a pretty substantial savings. For example:

If we were going to do MK and Epcot on the same day, couldn't I just use one day for MK and another day in the evening for Epcot? or can you only use one day at a time?

To use our 7 days we would do
MK
MK, Epcot
MGM,MK,Epcot
Animal Kingdom

It seems like a plan to me but I have never been and don't know all of the rules.
 
Unfortunately, one day = one calendar day, so the system won't let you count 2 "days" on one calendar day. The only way to do 2 visits to 2 parks on 1 day is to add the hopping option. I just asked this on another thread! Sorry...
