We bought a 4-day disney ticket but not through disney. Can we still add the hopper, or is it too late? TIA :)

You can, but if you bought this ticket before last year's price increase, then you would have to pay extra to bring it in line with the new style-tickets to add any options to it. If you bought the tickets recently then there is no problem.

So is the only way to modify a ticket to go in person to a ticket window? Debating extending my one day ticket to two.

This is the easiest way to do it. I'm not sure they can do it if you call. It might depend on the ticket (package, etc.). Any ticket window or Guest Relations location can do it though. If you only have a one day ticket, make sure to add days before the end of the day of use. You do not have to do it before you use it to enter a park though, so you can do it on your way out or whatever works best for you, but you can't extend it once that day is done.

I'm actually hoping I can do it before entering the park if I decide to go that route -- I'm considering going the evening I arrive as well as my one full day, so ideally I'd stop at the ticket window and get it taken care of before I'd ever used the ticket at all, to be sure I don't have trouble with it as I'm leaving later at night.

Oh, certainly, that's no problem. Just keep in mind that if you are going to MK, the ticket booths are at the TTC, not the gates, but there is a Guest Relations location toward the right of the MK gates and they can handle it there.
