Park Days Around Mothers Day

Hey Y'all -

We've got a five-park-day trip coming up in May and I'm trying to figure out order of parks, particularly given we're going to be there over Mother's Day weekend. My initial plan right now is:

Fri: Magic Kingdom
Sat: Hollywood Studios
Sun: Epcot
Mon: Animal Kingdom
Tues: Magic Kingdom redux

Travelers are myself, my hubby, our then-eight-year-old DD, and our almost-three-year-old DS. Do folks think these days/order make sense, and does anyone have a sense of whether Epcot on Mothers Day (particularly with Flower and Garden going on) is a bad idea?

We are checking in Mother's Day and are doing 4 park days starting on Monday. Our schedule is:

Monday: Epcot
Tuesday: AK
Wednesday: MK
Thurs: DHS

Might add an extra day on Friday, still undecided. Fingers crossed lower crowds during the weekdays.
