Park Day plans

Looking for input on my upcoming trip (making FP+ selections on 9/7). Taking a trip from 11/6-11/11 to celebrate our 10 year anniversary (spent our honeymoon in Disney!) Realizing this is over Veterans day weekend and might be busier than normal.

11/6 - Arrival Day
11/7 - Magic Kingdom
11/8 - Epcot
11/9 - Animal Kingdom (Morning EMH)
11/10 - HS (Have Oga & Droid workshop reservations already)
11/11- Late Departure, have BOG PPO reservation. Hoping since this is a party day, park will be lighter during the day before our 8:30PM flight

The Epcot/AK days are what I'm not sure of TBH. I know some like to avoid EMH as those parks tend to get busier throughout the day (we would take advantage of the extra hour though). However, I really want to increase our chances of FOP FP+ which is why I am leaning to keeping it on the Saturday even though it will likely be busier.

I did AK on a EMH day a few weeks ago and the park wasn't crowded but it also rained around 2-3pm. I was able to get a 1pm FOP FP+ on the 5th day of my vacation.

If I had to make a blanket statement, I would not have said the park was busier that day, at least in the morning. Pandora was packed as you would normally expect on any day. We did rope drop the park though.

We did MK on a morning EMH and it was a bit busier but not crazy and then we did EMH at night at MK and it was packed.
