We purchased a gift card online so it’s in the form of an email. Do most people use the email or download it to a magic band.

You can't download a giftcard to a Magicband, they do not hold any type of cash or credit value. You can charge things back to your Disney resort with a MB, but it goes on your hotel folio, not automatically deducted from a gift card. If you have a plastic gift card, you can transfer the balance to it, and you can probably save it to an Apple wallet if you have an Apple device. You could also print out the gift card and take it with you.

If it has a barcode the cast member can just scan it from your phone (at the restaurant or shop). You can also type in the numbers to use for mobile order. If it is a large amount you may consider saving the number in a notes app on your phone so you can copy and paste it each time you do a mobile order.
You can also do as the above poster mentioned and print it out or transfer it to a physical (plastic) gift card.
